A Warm Welcome to the Green Chile Café
Each morning, Harold Simmons walks into the Green Chile Café with more than culinary skill. He brings heart, history, and a love for community. As the new Dietary Director at Artesia General Hospital, Harold is here to create meals—and memories.
Harold’s passion for food started early. Raised in Jemison, Alabama, he learned the value of home-cooked meals at a local truck stop off I-65. The journey eventually led him to his role at Green Chile Café, showcasing Simmons’ dedication.
“We made everything from scratch,” Harold recalls. “Breakfast, lunch, and supper—all of it. That’s where I learned how food can wow people.” His favorite meal, “I love a good ribeye steak,” Harold says. “And sweet tea—always!”
His journey wasn’t direct. In 1998, he worked as a dishwasher at Riverchase Country Club to pay for school. But the kitchen pulled him in. He changed paths and enrolled in culinary school. By age 32, Harold had earned his first executive chef role.
Why Artesia Felt Like Home
Harold joined Artesia General Hospital after a memorable interview. The decision also linked Simmons with the Green Chile Café essence.
“I was still sweating a little,” he laughs, “but I could tell—these people really care.” The culture of kindness and teamwork sealed the deal. “I knew right away I wanted to be part of this.”
Harold approaches leadership like he does cooking: with care and consistency. His daily routine includes checking event sheets, overseeing patient meals, and managing the lunch rush.
“You start with a solid foundation. Create a consistent environment. Deliver good service. Make quality food,” he says. “And don’t ever mess with a chef’s oven!”
Southern Comfort with a Green Chile Twist
Harold was impressed with the café’s quality from day one. Now he’s adding his Southern flair. Guests can expect see some new items on the menu including:
- Andouille and shrimp jambalaya
- Peach cobbler
- Homemade chicken and dumplings with buttermilk cornbread (a fall favorite)
